My go to Salad picks

Salads get a bad rap. Perhaps it’s because you are used to the drab iceberg lettuce, dressing soaked dishes of yesteryear but honestly there are so many incredible entree salads out there today. The dressings are bright, complex and flavor boosters compared to what you might be used to. The nutrient density of eating a salad a day is great for fiber, micronutrients and roughage, which your gut loves. Besides the creations that you can find in my Salad Inspirations cookbook (check it out here) I’ve listed my top ten go to favorites from various bloggers. Trust me you will want these on repeat and will not tire of their incredible flavors. Click the titles for recipes.

  1. Grilled Chicken BLT Salad with Peppercorn Ranch - this dressing is soooo good and dairy free.

  2. Greek Salad from The Barefoot Contessa. Feel free to add some lettuce in addition to the veggies she has listed. Ina can do no wrong in my book!

  3. Sesame Ginger Orange Chicken Salad To keep this gluten free I skip the wontons and crumble Late July tortilla chips on top. While you are on her page, check out all of the amazing salads from Half Baked Harvest. Her flavors and combinations are unmatched in my opinion

  4. Quinoa Arugula Salad with Peaches If peaches are not in season where you live, simply substitute your favorite fruit like strawberries.

  5. BBQ Chicken Skewer Salad A healthier version of the salad I used to get at California Pizza Kitchen

  6. Blueberry Corn Chicken Salad This maple dressing is yummmm

  7. Vegan Caesar Pasta Salad I can’t eat eggs so I tend to look for vegan recipes like this- even though I’m not vegan

  8. Lemony White Bean Quinoa Salad If you are short on time grab the pre cooked frozen quinoa at Whole Foods

  9. Roasted Cauliflower Green Goddess Salad This dressing is so versatile for all veggies. If you can eat eggs use regular mayo

  10. Chopped Salad If you haven’t discovered Melissa on social media, she is the queen of salads and has a new cookbook out!
